Upmarket Restaurant in the northern suburbs has a vacancy for a Restaurant Manager to join their leadership team.  The mandate of the role is management and coordination of operations both back and front of house.

Requirements

  • Hospitality Management / Culinary Schooling Qualification
  • Minimum 6 years’ proven work experience as a Restaurant General Manager
  • International food and beverage working experience advantageous
  • Acute financial management skills
  • Hands-on experience recruiting junior, senior, seasonal and part-time positions
  • Deep knowledge and understanding of hospitality procedures and best practice including quality standards (e.g. ISO)
  • Strong understanding of industry related labour, health, safety, environmental, liquor legislation and regulations
  • Familiarity with restaurant management software
  • Proficiency in MS Office suite
  • Strong leadership, motivational and people (management) skills
  • Multi-lingual desirable
  • Intermediate MS Excel proficiency (budgets, formulas and rosters)

Responsibilities

  • Achieve company objectives in sales, service, quality, appearance of facility as well as sanitation and cleanliness through training of employees and creating a positive, productive working environment
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
  • Weekly stock-take to be monitored with the kitchen manager
  • Financial management and reporting
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures
  • Schedule labour and prepare rosters as required by anticipated business activity while ensuring that all positions are staffed and labour cost objectives are met
  • Make employment and termination decisions, in consultation with senior management and HR
  • Prepare and deliver training programmes
  • Develop staff in all areas of managerial and professional development
  • Oversee and ensure that employee performance appraisals are completed on a timely basis
  • Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures
  • Prepare all required paperwork, including forms, reports and schedules in an organised and timely manner
  • Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programmes
  • Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with the restaurant’s receiving policies and procedures
  • Develop, plan and carry out restaurant marketing, advertising and promotional activities and campaigns
  • Valid South African driver’s license and OWN reliable vehicle (will be verified)
  • Clear criminal record and no bad credit (checks will be done)
